This is a Newfoundland dish passed down from my
Great Grandmother Rachael who cooked on the fishing boats as a young girl.
1 lb Hard Bread Biscuits
2 lb Potatoes peeled and diced
1 lb Salt Codfish
1/2 lb Salt Pork (Scrunchions)
Prepare Brewis - split cakes of hard bread biscuits; allow one cake per person. In large saucepan, cover hard bread biscuits with water. Soak overnight. Next day, using the same water, salt to taste and bring to near boil. Do not boil. Drain immediately. Keep hot. Prepare salt codfish - soak fish 2 hours and or freshen with running water. Check every 15-30 minutes for salinity. Cook diced potatoes until still firm. Break prepared fish into bite size, layer over potatoes and cook 10 mintues. Add prepared hard bread biscuits. Toss lightly. Let set. Scrunchions - cut salt pork into small cubes and fry to golden brown. Use as gravy over Brewis. *If hard bread biscuits are not availble, use 3/4 box crushed pilot crackers. Wet crackers and add to fish and potatoes.
